Under the motto “mingling contrasting elements into harmony”, Chef Kang Min-goo marries tradition with new techniques and modern sensibilities for the contemporary palate. Much of his inspiration comes from his studies, where new discoveries are made within the realm of the familiar. He prepares his own "Jang", the trio of fermented Korean sauces that form the backbone of Korean cuisine. In his spare time, he travels all over Korea in search of ingredients that excite him.
