Chef Hyo Ju-Ahn, a former boxer, arrived from his hometown in Seoul without any experience, no job and no money… After many years of hard job, he started to learn Japanese cuisine, and then was able to join Ariake at The Shilla Hotel in 1985. Late 2003 he finally opened his own sushi restaurant. Chef Hyo Ju-Ahn focuses on every details from early morning when he visits daily the fish market to choose only the best products. He also import naturel water from Ha-Nam for cooking a better rice, and dry-age his own salt. All those special attentions, and long experience make delicious sushi. The chef-owner runs two other branches in Seoul.
